One of the most amazing things to happen in 2020 was that Tabitha Brown's TikTok videos went viral.
If you don't know her (have you been living under a rock?!), she makes quick vegan cooking videos on TikTok and is basically the sweetest person alive.
Her dishes always look so simple and delicious.
So I decided I was going to try out some of these recipes and see if they pass my taste test! Here's what happened:
Recipe One: Sweet Potato and Veggies
@iamtabithabrownQuick sweet potato medley using the @lgusa Air Fry is a win for any meal this holiday season! #vegan #tabithabrown #ad #LGUSA #Airfry

This one is very simple: just sweet potatoes, zucchini, yellow squash, onion, bell pepper, veggie broth, garlic powder, and herbs and spices. Put it in the air fryer and cook!
Verdict: Well, I put it in my air fryer for 25 minutes, and the sweet potatoes were still too hard to pierce with a fork, while the rest of the veggies were getting a little ~too~ crispy. This would have worked better baked in the oven.

Recipe Two: Veggie Spring Roll
@iamtabithabrownHealthy minds and snacks on today🙏🏾😋 .#vegan #foodie #tabithabrown

I wanted to try a little snacky snack, so I found this video she has of veggies in a spring roll wrapper. All you need is the wrapper, avocado, basil, cilantro, cucumber, carrots, red pepper, and onion. Wet the wrapper to soften it and build your roll!
Verdict: I decided to air-fry mine, and it was *chef's kiss* delicious. I used a soy sauce container left over from last night's takeout as the dipping sauce.

Con: It all kind of started to fall apart in my hands halfway through, but I'm pretty sure it's because I air-fried it.

Recipe Three: Garden Scramble
@iamtabithabrownJUST Egg helps me make a better breakfast for my family ❤️ What does a better breakfast look like for you? #BetterBreakfastMonth @eatjust

For this recipe, you'll need Just Egg (one whole bottle), red pepper, chopped kale, onion, and mushrooms. Cook all the veggies first, then add the Just Egg and stir until it's cooked! Easy peasy.
Verdict: OH. MY. GOODNESS. This is DELICIOUS. I was truly impressed with how filling and scrumptious this breakfast was.
I added garlic powder, salt, and pepper and it was divine.

Recipe Four: Spaghetti and Sausage
@iamtabithabrownHappy Sunday Dinner pasta for my family! #vegan #pasta #sundaydinner

First, cook the veggies in one pan. Then cook the sausage in another while boiling the pasta. Then serve! So simple, but I'm surprised there wasn't a sauce to add. Will it still be good?
Verdict: Not bad! I do think it would be a thousand times better with some type of sauce, but it's still tasty, and the sausage made it a super-filling and flavorful dinner.

Recipe Five: Avocado and Cheese Toast
@iamtabithabrownBold, cheesy, avocado toast. Baby these #plantbased Chao Spicy Original Slices from #FieldRoast will get your whole day together 🙌🏿 #ad

I am a huge fan of avocado toast (it's definitely why I don't have a house; I know it), so I was really excited to try this recipe. All you need to do is spread some butter on bread and add tomato, onion (I omitted this because I don't like raw onion), avocado, salt, pepper, and garlic powder.
Verdict: Yum! Honestly, anything with cheese is going to be undoubtedly delicious. I couldn't smash the avocado on the melted cheese easily, which was annoying, but overall, a great lunch.

Recipe Six: Hash Browns
@iamtabithabrownFancy hash browns 😋 #vegan #foodie #tabithabrown

Cook the veggies, then add the hash browns. Top it with the best thing in the world, cheese, and let it melt. A quick and easy breakfast choice.
Verdict: Oh my — yes. This is everything. So cheesy, so potatoey (is that a word? It is now). It's absolutely delicious and was super filling for an after-workout breakfast!
